TEA IN THE RAIN

WHAT'S IN IT

1.5 oz London Drizzle Gin
1 oz earl grey tea syrup
0.4 oz Italicus bergamot liqueur
0.4 oz pinot noir red wine
0.6 oz lemon juice
Foaming bitters or egg white
Lemon twist to garnish

HOW IT'S MADE
  • Add gin, earl grey syrup, Italicus, red wine, lemon juice, and foaming bitters/egg white to a shaker without ice. (To make Earl Grey syrup, steep 2 tea bags in 1 cup boiling water for 5 mins, stir in 1 cup sugar until dissolved, leave to cool.)
  • Shake vigorously to build foam.
  • Add ice and shake again until well chilled.
  • Strain into a chilled coupe glass.
  • Garnish with a lemon twist.
WHAT IT'S LIKE

The Earl Grey brings an earthiness to the beetroot in the gin and the lightness of the wine, with the Italicus accentuating the citrus flavours. Lemon is added to brighten it up and make it refreshing.
