WHAT'S IN IT
1.5 oz London Drizzle Gin
1 oz salted strawberry syrup
0.5 oz red wine
8 dashes orange bitters
HOW IT'S MADE
- Add gin, salted strawberry syrup, red wine, and bitters to a shaker with ice.
- Shake until well chilled.
- Fine strain into a chilled flute glass.
- Optional: Garnish with orange peel rose.
To make salted strawberry syrup, combine 3 chopped strawberries, 2 oz water, 1.5 oz sugar, and a pinch of sea salt in a small pan. Simmer for 5 mins until the strawberries soften, mash gently, then strain through a fine sieve. Leave to cool before using.
WHAT IT'S LIKE
With the beetroot notes of the gin, the salted strawberry syrup takes on an almost sangria-like flavour profile, making the orange bitters really necessary here to stop it tasting a tad funky.

Strawberry, salt, beetroot and orange. Unlikely to appear together on any menu, yet excellent cocktail partners.

Gin is traditionally called London Dry - but I live there and usually it isn’t. So I wanted to make a gin that would invoke that unique petrichor smell that comes from light rain hitting the pavement on a warm day. I’ve never met anybody who doesn’t like that smell.
