The Groovy Gibson
DIFFICULTY
Easy
WHAT'S IN IT
2 oz California Dreamgin' Gin
0.5 oz Italicus
0.5 oz Chardonnay
0.25 oz Dry Vermouth
HOW IT'S MADE
- Stir and strain into a Nick & Nora glass over fresh ice.
- Garnish with a cocktail onion on a pick, with a long, thin lemon peel
WHAT IT'S LIKE
The culinary element of the mushroom pairs phenomenally well with the wine, and the dry vermouth brings it to familiar territory as a gin martini variation, with the Italicus bringing some levity and complexity on the citrus-side of the flavour profile.
JAMES' TASTING NOTES
Walter D. K. Gibson was a prominent San Francisco businessman who claimed to have created the drink at the Bohemian Club in the 1960's. In its basic form it's just a Martini garnished with an onion instead of an olive. Here it's much groovier.

California Dreamgin'
Our gin has proved particularly popular with Californians so we invented one in their honour. Distilled with mushroom, oregano and patchouli: the botanical signature of the American hippie movement that originated there. A gin for people who find most gins too square, man.
